Wolfie’s so-called recipe for Chili :

Ingredient list:

2 ¼ lbs. +/- stew meat (trim obsessively – remove all fat and gristle), or ground beef (chuck seems to work out the best taste wise)
1 large Vidalia/yellow or Bermuda onion
3-4 jalapenos – fresh or pickled/canned (Mt. Olive has a water packed process that is pretty good)
4-5 cloves fresh garlic
Masa flour – lime processed corn flour – look in Mexican food section
Chili powder
Chipotle
2 cans (10 oz) Rotel – habaneros and tomatoes, green chilis and tomatoes, and/or tomatillos and tomatoes w/lime (mix or match as desired – I suggest starting with 1 habanero and 1 tomatillo).
Chili beans (15.5 oz) – Bush and Great Value make them – these are seasoned.
Chili ready tomatoes – Great Value makes them – these are also seasoned.
Bush’s Chili Magic – this is a chili starter – about $1/can – comes in mild or medium.

Procedure (if you want to call it that):

Dice onion the way you like it.
Throw some olive oil in about a 3 qt saucepan (if using crockpot too – 5 qt if not) and heat.
Toss onion in – cook until beginning to soften. Stir frequently.

Add diced jalapenos with onion if fresh, if pickled/canned wait until onion has cooked a while.

Add diced garlic pretty close to when onions/peppers nearly done. What you’re going for here is cooking the “green” or raw out of ‘em -

Cook until garlic just begins to brown.

Toss in Chili Magic, after taking clear juice/oil off the top – save can.
Toss in Chili Beans (again removing all clear juice/oil from top) and Chili ready tomatoes (just toss these in – there will be no oil).
Open Rotel cans – leaving lids on, drain juice into Chili Magic can. Add contents of Rotel can(s) to saucepan.
Add seasonings to the saucepan and mix well.
Add 2 heaping teaspoons of masa flour to juice from Rotel cans – blend with small fork until all lumps gone – add this to the saucepan.
Cover saucepan. Leave on low heat – stir frequently.

Add olive oil to 12” frying pan – fairly high heat.
Add meat – stir frequently until something like medium rare – we’re going for a sear here – but don’t let it cook completely – it’ll finish in the saucepan or crockpot – if you add it after browning and draining (hint, hint).

Notes:

I don’t usually add salt – but I did today – about a teaspoon – to the mix, not to the meat while cooking (toughens it up – I have tried it).
When browning onions, peppers, meat – keep some sizzle going (cook by ear).
When cooking complete mixture in saucepan – keep it simmering – stir often to keep from getting stuff stuck to bottom of pan.

It needs to cook for at least an hour (2 is better) in saucepan, after final assembly – more if doing in crockpot (5 seems about minimum – overnight best).

All quantities are variable to taste – might take a couple of tries to get it the way you like it best. The procedure has been pretty well worked out.

Today and yesterday been feeling ill, got a cold or smth, head aches, bunged up, that stuff. Think I got it from a student at work..

Installed Server 2008 on my old OptiPlex GX270, seems to run ok on there, 80GB drive, 3.00GHz P4, 512MB RAM, am going to add a 256MB stick in there, then hopefully get some 1GB sticks from work if I can, if not I'll order some from Amazon. Since it's DDR it should be quite cheap now.

I really need to put these servers in a rack, and properly cable them up. Atm the DL360 is sitting next to me, in temp storage while the garage is in a mess, the ML350 is somewhere under a pile of stuff, I'm hoping it's ok, it should be.

Been looking at modding some old AP's to POE, shouldn't be too hard, I was planning to mod the WAN port, take the 4 pins that aren't used and wire them to where the power socket would be. To do this I'd need to cut the traces on the board, but can't find them, so am going to try something else.
I've got a few of these cable joiners, so am going to pop them open, snip the 4 cables that POE uses and then wire a power plug and jack to each one, then boom, POE on the cheap.

So yeah, pretty much my day today! :)
