I presume you mean \Users\<username>\AppData\Roaming
The Roaming folder is for app. specific data, which roam with the user profile.
Application Compatibility: Junction Points and Backup Applications
3gb seems a lot - inside you will find folders with various program names - check the sizes.

After seeing it was just junk files, I deleted all but Microsoft & Mozilla, which
were in use. All the rest were garbage....the 3gb was a copy of my
Dreamweaver website files....don't know why it was duplicated(?)
I wondered why my C drive was getting full...will keep an eye on it from
now on.

I think you have used Auslogics Booster or something to backup its settings.
Have you tried delete all rescue backup in your Auslogics Booster? Go run it and go settings, delete all backup the program made.
